Cook Eggs without Sticking in a Stainless Steel Skillet

Place a stainless steel skillet on the burner
Set heat level to medium. For my induction cooktop, that is level 7 of 9
Drop a small amount of water into the pan.
If it steams and then evaporates, the pan isn't hot enough
You will know that the pan is at the proper heat level when water beads up and dances in the skillet without evaporating
Lower the heat. For me, that means level 5
Add oil to the skillet, then add a small amount of butter
Do not add the butter first
Add the egg and alow to cook for about 30 seconds
At tha point, loosen the egg with a fork or spatula
Continue to cook until the egg sets
Flip the egg
If you did this properly, the egg will release without sticking
