Egg Substitutes



Substitution Number One
When baking Almond Cookies, the recipe called for two large eggs.
I substituted two heaping tablespoons of mayonaise. It made the cookies more light and flaky. I preferred the new cookie over the one using eggs

Substitution Number Two
For each egg, replace it with 1 tablespoon of flax meal and 3 tablespoons of water.
Mix the two and allow to set until gelled, approximately 20 minutes
