Unagi Sauce

4 oz Soy Sauce
4 oz Mirin Rice Wine Vinegar
4 teaspoons Brown Sugar
1 ½ oz Sake
1 Tablespoon Corn Starch (for thickening; omit or adjust to taste)

Add all ingredients to a small sauce pan
Heat over low heat until Sugar is dissolved and Corn Starch is blended
If desired, omit Corn Starch and reduce liquid by heating slowly.

Yield: 10 oz
