Salmorejo
Recipe of Joan Fox
Ingredients
500 grams very red tomatoes
3 grams/1 clove garlic
10 grams/1 T vinegar
30 grams/2 oz virgin olive oil
salt to taste
2 hard boiled eggs
diced jamon serrano for topping
1 stale Spanish or French bread - very dry but not moldy
Fresh stick bread or sliced bread for dipping in the Salmorejo
Preparation
Remove crust from bread
Peel the tomatoes (optional)
Chop tomatoes up and place in blender with oil, vinegar, garlic and salt
Blend together
Add the stale bread bit by bit
Dice hard boiled eggs and add separately
Mixture will thicken with the addition of bread
Serve cold
