4,500 grams/10 lbs ground pork; coarse ground
90 grams/5 Tablespoons Kosher Salt
82 grams/6 oz Paprika
175 grams/6 ounces Sweet Cooking Sake
192 grams/6 ounces Cinnamon Applesauce
13 grams/2 Tablespoons Yellow Mustard Seed

Yield 10 lbs

Coarse grind pork
Mix other ingredients with ground pork
Add olive oil if sausage is too lean
Regrind sausage mixture
Stuff Sausage in Natural ¾" Hog Casings
Package in sealed plastic pouches
