Oatmeal Cookies

400 Grams/2 cups packed dark brown sugar
200 grams/1½ sticks salted butter, softened (for healthier cookies substitute apple sauce)
8 grams/2 teaspoons vanilla extract
2 eggs
180 grams/1 ½ cups all-purpose flour
5 grams/1 teaspoon salt
3 grams/½ teaspoon baking soda
240 grams/3 cups old-fashioned oats

Optional: 50 grams/5 tablespoons raisins
If including raisins, heat raisins in hot water for 3 minutes
Drain water
Continue with recipe

Combine all ingredients in a mixing bowl, blending well
Chill dough for one hour to keep it from spreadding
Using a tablespoon or a meatballer, scoop out cookie batter and place on a cookie sheet lined with parchment paper
Meanwhile, reheat the oven to 400░ F.
Bake for 12 minutes
Check for doneness, adding more time if necessary until edges of cookies begin to darken
