Oat Bread Recipe

10 grams Yeast
100 grams Sugar
20 grams Salt
400 grams Bread Flour
300 Grams Ground Oats
One Egg
450 grams Water (Add more as required for dough consistency)
120 grams of Olive or other oil

Heat 30 grams of water to 110 degrees F
Add 10 grams of yeast and 20 grams of sugar, stirring gently
Proof the yeast mixture to confirm its viability
In a large mixing bowl mix together 400 grams of bread flour and 300 grams of ground oats
Gradually add the ingredients and beat two minutes at medium speed scraping bowl occasionally
Beat to make a soft dough
Turn out onto a lightly floured board and knead until smooth and elastic about 10 minutes allow the bread to rise once in the mixing bowl and once in the baking pan.
For a golden crust, baste the risen loafs with melted butter before baking.
To bake, place loaves a 400°oven. After 15 minutes reduce heat to 375°
Test for doneness. Remove the loaves when the internal temperature reaches 210° and cool in a rack before storing.

1 teaspoon ground celery seeds
1 teaspoon ground caraway seeds
1 teaspoon ground dill or dill seeds

½ teaspoon marjoram or basil
¼ teaspoon thyme
1 tablespoon chopped fresh parsley
½ teaspoon oregano

¼ teaspoon ginger
1 teaspoon thyme
1 teaspoon summer savory
1 teaspoon rosemary

1 teaspoon nutmeg or cloves
1 teaspoon rosemary
1 teaspoon dill
1 tablespoon chopped fresh sage
