Minyak Bumbu



Ingredients
1 cup vegetable oil (such as canola or sunflower oil)-I substituted sweet soy sauce
1 tablespoon minced garlic
1 tablespoon minced ginger
1 teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon red chili powder (adjust to your preferred heat level)
1/4 teaspoon salt
1/4 teaspoon black pepper
1 lemongrass stalk, bruised
1 bay leaf
1 pandan leaf, tied into a knot? I used a concentrated artificially flavored pandan extract

Directions
In a medium saucepan, combine all the ingredients.
Bring the mixture to a simmer over medium heat.
Reduce heat to low and let simmer for 15-20 minutes, or until the oil is fragrant and the spices are infused.
Remove from heat and let cool slightly.
Strain the oil into a jar or bottle.
Allow the oil to cool completely before using or storing.
