FrittataIngredients 8 eggs1 tablespoon flour (for firming the egg mixture) ¼ cup milk or other dairy product (half and half or whole milk) ½-¾ cup vegetables (2 large roasted bell peppers with skins removed) ½ cup shreaded cheese Directions Whip eggs, milk and flour Pour into 8-10" skillet containing ¼ cup olive oil Heat on range top until mixture begins to pull away from the side of the skillet Let set for several minutes Place skillet into oven heated to 375º Bake for 15 minutes or until fluffed up Remove to cool Serve Recipe thanks to David Musial Variations To 8 eggs 1 tablespoon flour ¼ cup milk or other dairy product (half and half or whole milk) Add one of the following combinations 1 cup sauteed diced red bell pepper + zucchini ¼ cup finely chopped fresh basil leaves 1 cup each halfed cherry tomatoes, diced avocado and cooked chicken ¼ cup crumbled cooked bacon and blue cheese 8 ounces italian sausage, browned and crumbled ½ cup cooked broccoli rabe, cut in 2" segments ¼ cup Parmesan cheese 2 cups sliced cooked asparagus 4 ounces smoked salmon, chopped ¼ cup each chopped fresh chives + flat leaf parsley
