Fava Bean Preparation

Ingredients

2 lbs Fava Beans
3 tablespoons olive oil
3 tablespoons butter
2 cloves fresh minced garlic
1 tablespoon fresh chopped sage

Directions

Rinse beans thoroughly.
Soak beans in three times their volume of cold water for a minimum of four hours.
After soaking drain water. Add fresh water, roughly double the volume of beans.
Add baking soda to the water before boiling. (This helps in removing the skin later)
Heat to boiling and then reduce heat to a simmer
Cook beans uncovered until tender approximately 1 1/2 to 2 hours.
Season with salt in the final stages of cooking.

Final Preparation

Drain and remove the outer skin from the beans
Heat olive oil and butter in a large skillet
Add garlic and sage, stirring over medium heat until garlic is tender
Add fava beans and stir to coat
Season to taste with salt and freshly ground black pepper
Serve hot
