Apple Pie

1 recipe pie dough
3 pounds apples (6-8 medium-large)
¾ cup sugar
½ teaspoon ground cinnamon
⅛ teaspoon salt
¼ teaspoon grated nutmeg
1 tablespoon lemon juice

Line a 9-inch pie pan with half the dough.
Peel, core, and slice apples a little thicker than ¼ inch.
Mix all other ingredients in a large bowl
Fill the pie shell with the apple mixture
Trim off any pie dough that overlaps the baking dish
Preheat oven to 425°
Bake for 40-45 minutes
NOTE: To prevent the edges from burning, wrap them with aluminum foil after 20 minutes
Bake until the crust is richly browned and the filling has begun to bubble, 30 to 40 minutes.
Let cool completely on a rack, 3 to 4 hours.
