Freeze Dried Tangerine Juice

I picked fresh tangerines from my orchard for freeze drying in my Harvest Right Small Freeze Dryer
  
Each stainless steel tray measures 7.75" W x 14" L x 0.75" H and weighs 514 grams

I froze all 4 trays in my freezer before taking them to the freeze dryer
I turned on the freeze dryer and allowed it to perform a 15 minute pre-freeze
I then inserted the four trays



The Freezing/Drying cycle took 24 hours 15 minutes
I added a 2 hour defrost period
I opened the freezer door after 26 hours 15 minutes
Total processing time: 26 hours 15 minutes

I placed the contents of the four trays in a Ninja blender and powdered it, ultimately packaging 215 grams of Tangerine powder in a Mason jar with oxygen absorber
I preferred the taste of the peeled puree over the puree made from unpeeled Tangerines but both were less sweet than regular Orange Juice.

To make 12 ounces of reconstituted Tangerine Juice, mix 40 grams powder (4 oz by volume, not weight) with 10 ounces of water and stir thoroughly.
Preferring a slightly sweeter drink, I added a little dried Stevia, a natural sugar substitute
