Fullbean Recipes - Stuffed Vegetables
Ingredients
Large mushrooms with stems removed
Hollowed out bell peppers
Scooped out Zucchini
Scooped out Bolillos/rolls
Ideas
Remove the stems from large mushrooms
Remove the seeds from Bell Peppers
Slice a large onion in half transversally and expand the rings to form two baskets
Scooped out Zucchini
Fillings
Stuff any/all of the above with one of these fillings
Ralph's Linguisa cooked and reduced to ground pork (Add plum sauce}
Basil pesto with extra Parmesan Cheese
Directions
Place the stuffed vegetables on a parchment lined baking sheet
Mist Vegetables with Olive Oil
Preheat oven to 375°F
Bake for 20 minutes
Check for doneness and add time in two minute intervals until ready
